Vichyssoise Soup Recipe

1 onion
2 leeks
2 potatoes
3 tablespoons of fraiche crème
1 tablespoon of olive oil


Handful of chives
1 tablespoon of olive oil


1) Peel and wash the onion and then dice it.
2) Cut the top of the leek and wash carefully.  Chop the white parts of the leeks
3) Peel, wash and chop the potatoes.
4) Heat the olive oil in a non-stick pan and add the diced onion and the chopped leek and sauté for five minutes or so until they are soft and creamy.
5) Add the chopped the potatoes and then add enough water.
6) Let that cook over a medium/low heat.  Remove from the heat once cooked and allow it to cool.
7) Once the vichyssoise soup has cooled down, add the fraiche crème and mix very well and put it back on to the heat and cook stirring it constantly until it boils.
8) Using an electronic blender, blend the vichyssoise soup into a smooth, velvety texture.


1) Heat the olive oil and saute the chives for a minute or so and add that to the soup before serving.
2) Enjoy.
