Eggs in Bell Peppers Recipe2014-03-05

1 tablespoon of olive oil
2 tablespoons of boiling hot water
Black Pepper (optional)
Lid of a saucepan
1) Wash and dry the bell pepper and cut circle shapes in 1 cm thickness
2) Put the olive oil in a saucepan and let that heat. Put the bell pepper and let that fry slightly then break the eggs inside the bell peppers. You will have some egg white escape around the bell peppers but no worries as you can easily remove them using a plastic spatula or eat it that way.
3) Sprinkle black pepper and salt as desired. Put boiling water into the saucepan but not on the eggs just at the side and close the lead and let that cook for about 3 minutes on low heat. Boiling water and closing the lid of the saucepan is essential to cook the tops of the eggs.
