Dried Tomatoes with Walnuts Sauce Recipe

Ingredients

200 grams of dried tomatoes
200 grams of walnuts
1 cup of white wine (or water)
½ cup of balsamic vinegar
1 cup of good quality olive oil
3 or 4 cloves of garlic

Method

1) Put the dried tomatoes in a saucepan add the white wine and balsamic vinegar and let that boil on low heat until the dried tomatoes are soft.  Let that cool.
2) Remove the cool tomatoes from the saucepan using a fork so that some of the juice stays on the tomatoes and put that in a blender.  Add walnuts, garlic and olive oil little by little and blend until very smooth.  You may use less or more olive oil as desired.
3) You can serve this sauce with bread sticks, crisps or bread.  I also use it to make quick pizza with it too.  Just spread this onto pitta bread, top it with grated cheddar cheese or mozzarella and let the cheese melt under grill until light brown.
4) Enjoy.
