Carrot and Walnut Salad Recipe

Ingredients

2 medium carrots
1/2 glass of walnuts
1 garlic
3 tablespoons of strained yoghurt
1/2 tablespoons of butter
Very little chopped parsley
Salt

Method

1) Peel, wash and roughly chop the carrots using a food chopper.  You can grate it if you don’t have a food chopper.
2) Roughly crush the walnuts (I normally use the food chopper to do this too) and put it in a sauce pan with the chopped carrots, add the butter and cook it until carrot is nice and soft at low heat with the lid closed.
3) Once cooked, remove from heat and let that cool.
4) Crush the garlic, add the salt and the strained yoghurt and mix well.  Add it to the cooked carrots and walnuts and mix until well combined. Sprinkle chopped parsley on top and serve it cold.
5) Enjoy.
